  • Olive oil (1 tablespoon)
  • fennel 1 cup (thinly sliced)
  • onion 1 ½ cups (thinly sliced)
  • carrots & celery 1 cup (thinly sliced)
  • all-purpose flour (½ cup)
  • fish stock (3 cups)
  • black pepper ½ teaspoon (ground)
  • white wine ½ cup dry
  • kosher salt (1 tablespoon)
  • 1 fillet halibut (skin removed, cut into 1-inch pieces)
  • medium shrimp ½ pound (peeled and deveined)
  • ¼ cup heavy cream, divided
  • green peas 1 cup (frozen)
  • chopped fresh parsley 2 tablespoons, plus more for garnish
  • egg 1 large (lightly beaten)
  • frozen puff pastry sheets, thawed 1 (17.3 ounces) package
  • jumbo lump crab meat 1 pound, picked over
  • sea scallops ½ pound (halved horizontally)
Direction

Step 1: To prepare your favorite seafood pot pie with puff pastry, take a large saucepan and melt butter and olive oil over medium to high heat. Add onion, celery, carrots, and fennel to it and keep stirring until the ingredients soften. Next, add flour to it and coat the vegetables properly. Keep stirring for 1 minute.

Add wine and stir until it evaporates and create a thick mixture. Once the mixture comes to your preferred thickness, pour the fish stock and 3 tbsp cream and keep stirring until it becomes thick and creamy. Season it with pepper and salt, then fold in the sea food gently with parsley and green peas.

Step 2: Turn down the heat to medium-low, gently toss the mixture often, and cook for 6 to 8 minutes or until the sauce is warmed. Meanwhile, the seafood will be a little raw in the middle. Pour 2 cups of the mixture into each of 5 (18 to 20-ounce) ramekins or oven-safe bowls that are not buttered. Put the bowls on a baking sheet with a rim covered with foil.

Step 3: Set oven to 375 degrees Fahrenheit (190 degrees C). Set the middle rack in the oven.

Step 4: Mix the egg and 1 tablespoon heavy cream in a separate bowl. Set defrosted puff pastry sheets on a work surface lightly dusted with flour. Each sheet should be rolled into a square measuring 13″ x 13″ before being divided into quarters. Throw out any extra pastry. Each bowl should have a pastry square placed over it. If desired, you can decoratively fold the corners of the square into the bowl. To let steam escape while baking, cut three tiny slits with the point of a knife in the pastry’s middle. The top of the crust can be decorated with chopped parsley or fennel fronds. To adhere to the garnishes, lightly press them into the egg wash.

Step 5: Place the baking sheet with the individual sections inside the preheated oven, and bake for about 40 minutes until the dough is golden brown and the filling is hot and bubbling. Serve them immediately.
