- Pearl two cups
- Two and a half cups of water
- French lentils half cup
- two plum tomatoes (diced)
- one diced cucumber
- one diced red bell pepper
- half cup dried cranberries
- golden raisins half cup
- diced red onion
- fresh chives sliced 1-2 inch
- flat-leaf parsley chopped two tablespoon
- thin slices of one green onion
- ground sumac one teaspoon
- Olive oil ¼ cup
- Juiced two lemons
- two tablespoons of honey
- Add ground black pepper with salt according to your taste
Instructions to Follow
Here are some steps which you can follow to make the salad.
Heat one tablespoon of olive oil in a pan on medium heat. Add in couscous and stir until they are fragrant and toasted. Add two and a half cups of water and wait till it starts to boil. Keep cooking until the couscous becomes tender. Keep stirring for 10 minutes. Now it is time to rinse couscous with cold water in a colander. Keep the couscous in a bowl and add 1/4 cup of olive oil and stir for a few minutes.
Add some water to a pan and place lentils. Wait till the water boils to reduce the heat. Simmer the lentils for 15-20 min until it becomes tender. Rinse and drain lentils in cold water in a colander and add it with couscous.
Make a mixture of cucumber, tomatoes, cranberries, red bell pepper, red onions, raisins, chives, green onion, parsley, and sumac. Add this mixture into the mixture of couscous and lentils.
Add lemon juice, pepper, salt, and 1/4 cup of olive oil in a bowl. Once done, pour over the mixture over your couscous and lentils and stir until it is well mixed. Now, to get the maximum amount of flavor, keep the salad in the refrigerator for at least 8 hours or overnight. Now, your delicious and healthy salad is ready for breakfast.
